It’s What I Ate Wednesday here: a time to share a full day of eats. Today I have a popular special guest, certified personal trainer, Sara. Sara has graced us with her knowledge before when she talked about fitness myths and did a Q & A. Today she is here to share what she ate in a day!
I’m glad for another opportunity to share with Hollie’s readers. I so enjoy her blog and the motivation and inspiration it provides! She’s asked me to share my WIAW. Please know that even as a personal trainer, my diet is far from perfect. I strive to eat clean/whole foods 80-90% of the time and allow for treats in my diet as well. For me treats typically come in the form of beverages and sometimes chocolate (peanut M&Ms to be exact) but mostly we strive as a family to eat healthy. An area I’m trying to be very mindful of at the time is my water intake. I don’t do the best job of getting enough water each day and I can always tell when I have been slacking. So today I focused on a little more water and a little less coffee (one of my treats). Also, full disclosure…my family just returned from a trip to Florida. We were gone for 9 days including driving days. We did pack lunches wherever we went and bought normal groceries for breakfast but we had many more indulgences than normal and ate on the go more than normal. Therefore, this week will be a “get back on track” week!
I started the day with a workout. Normally I try to eat something before working out but today’s was an extra early one so I didn’t eat until after. Refueling is so important. I actually make the protein pancakes that Hollie posted many months ago and eat them for breakfast often. I’ll quadruple the recipe and freeze them for the week. Today I topped them topped with almond butter and of course coffee with vanilla almond milk.
After being at the Y all morning (where I intentionally drank more water instead of more coffee), I stopped at Fresh Thyme to pick up some dinner ingredients. I did pick up a coffee there but this time drank it black. I added it to my lunch which was sweet peppers, hummus, grapes, and a mixture that has become my new favorite (grape tomatoes, onions, cilantro all chopped and mixed with feta).
I usually spend some of my son’s nap time prepping dinner or some other food for the week. today I made snacks/lunch box food. We call these “freezer bars”. It is essentially a homemade Larabar. I combine about 3 cups of nuts (today it was almonds, cashews, and walnuts), a small container of pitted dates, about 1/4 cup of almond butter, about 3 Tablespoons coconut oil, about 1 Tablespoon honey. It all goes in the food processor. When it’s finished combining, I throw it into a few pans to freeze for about 90 minutes and then take the out, cut them, and individually wrap them in foil and put back in the freezer. We all love these. And WHY can’t I make them without eating them? I had to include to share the idea but also because I ate the equivalent of about half a bar:).
Snack for the boys (after school) was a smoothie. I just threw together some spinach, frozen cherries, a banana, ice, almond milk, and almond butter. It turned out to be a dark color so they thought they were drinking a chocolate shake…WIN! I wanted to share for the idea but also because I (again) ate some as I made it:).
Dinner was chicken sausage and roasted peppers/onions/asparagus (drizzled with lemon juice, garlic, and olive oil). Simple! Oh, and I continued my water consumption here!
Finally, I made myself a cup of sleepytime tea (my favorite) and some dark chocolate chips (I keep these in the freezer for a treat every now and then). It’s all about balance, right?
I always enjoy hearing what others are eating so that I can get new ideas. I hope this post does the same for you. I am not someone who focuses on macro counting, all Paleo, all Gluten-Free, or any other “diet”. Personally, I go for more of a balanced approach with a bit of fun at times!
