Crockpot meals are a must in our house and I am sure they are in yours too. Each week I make 1-2 meals in the crockpot because it is so easy and I love having dinner ready without rushing around in the evenings. Often times you think of the crockpot as a wintertime thing, but in our house, we use it all year round for fast, healthy and easy dinners. Today I am sharing my five favorite crockpot recipes- during any given week you can find one of these on our menu.
Favorite Crockpot Meals
After I posted my newest favorite, crockpot meatballs & marinara, I thought it was only fitting that I share with you my other favorite crockpot meals. It doesn’t matter what the age of your munchkins, getting dinner on the table seems like a daunting task and these crockpot meals make it a much smoother process. I promise, your whole family will love these dinners and will be asking for seconds.
1. Crockpot Chicken Tortilla Soup
I love meals that require very little cutting and you can just throw everything in the crockpot and let it cook. This chicken tortilla soup is that kind of meal- the only thing you have to cut is the onion. You and your family will love the taste and ease of this meal.
2. Italian Chicken
My husband loves any meal that includes pasta and this Italian chicken is one of his favorites. In the morning I put the following ingredients in the crockpot: chicken, 1 can diced Italian tomatoes, and 2 tbsp. olive oil and 1/4-1/2 cup of balsamic vinegar. I let the chicken cook all day long and then shred it. I serve it over pasta or spaghetti squash with some broccoli and parmesan cheese for the perfect pasta dish. It tastes super yummy on your salad the next day too!
3. Chicken with Sweet Potatoes & Carrots
We have been making this crockpot meal for over 5 years now and it appears in our dinner rotation often. I love this recipe from Julie at Peanut Butter Fingers and the combination of sweet potatoes and carrots is just perfect. I can never seem to eat only one bowl of this- you will love it.
I shared the Mexican Pork Tacos in my Taco Tuesday recipe roundup and it is definitely one of our favorite crockpot meals. In the crock pot goes: one pork loin, a can of black beans, a can of rotel, 1-2 and tbsp. of taco seasoning. I let it cook all day and then add 1-2 cups of corn the last 2 hours. You can serve this with soft or hard tacos, on a salad or even over a baked sweet potato (trust me it is awesome!).
5. Rosemary Garlic Roast & Veggies
Everyone loves a good beef roast in the crockpot and this seasoning makes it even better. We always have a freezer stocked full of grass fed beef roasts and this is my favorite way to cook it. It is so easy to throw in the roast, cut some potatoes, green beans, onions, and carrots and generously sprinkle with Tone’s Rosemary Garlic seasoning. Sometimes I will just make the roast and we eat it as shredded beef sandwiches for dinner or lunch. I have only been able to find the seasoning at Sam’s, but lucky for you, it is also on amazon: you can order it here and I would highly advise you too.
